This is a great vegan winter-warming meal that’s a bit more substantial than soup! The main ingredients are beans, kale, onion, chopped tomatoes and spices – super simple and cheap!
The thing I’ve realised on this meat-free recipe journey has been that they key to anything is the spice; beans and kale alone aren’t a tasty meal, but add the cumin, paprika, turmeric, garlic, ginger and chilli and you have a super yummy dinner. This may be so obvious to a lot of people, but as a student I didn’t ‘invest’ in these spices – I had salt, pepper, cinnamon (my fave!) and some mixed spice.
This recipe uses simple ingredients, takes about 20 minutes to make and it’s perfect for the cooler months! I served it with garlic bread (slightly addicted to the stuff!).
