Meat Free Monday: Butternut Squash, Sweet Potato and Lentil Dahl

So I’m slowly working my way through the Deliciously Ella book!

This is probably the most typical ‘boring vegan’ dish that people think of whenever you say vegan – it’s based on lentils and looks brown/beige. HOWEVER, it is so yummy!

There’s nothing that can be done about the colour, as it’s just the colour of everything absorbing! There’s tomato puree, cumin and turmeric as well as the lentils and veggies themselves.

I chose to use both butternut squash and a sweet potato to give it a little variety.

This is such a warming and comforting dish – perfect as it’s getting colder now. It’s also really cheap, so it’s a good option for anyone on a tighter budget. The recipe made 4 portions, so I’m able to freeze the rest for another day – I love this as it means less washing up and a healthy ready meal available for some time when I don’t have time to cook!
