Meat Free Monday: Lentil Bolognese

This is another recipe from Deliciously Ella, but it’s a great staple for vegans/vegetarians!

The lentils mean there’s some protein in the meal, and it was super tomato-ey as it contains a tin of chopped tomatoes plus a whole tube of tomato purée (for 2 people)!! It was pretty intense.

It’s pretty simple, but does take time as it needs 40 minutes+ to simmer.

Next time I make this I’ll also add some greens for a bit of contrast, as well as more basil/oregano to overcome the tomato intensity!

Of course I also had garlic bread with it because… Garlic bread.
