This isn’t the most exciting recipe – it was inspired by Thug Kitchen’s Stir Fry (in the book). The main veggies are broccoli, baby corn, mange tout, mushrooms as well as bean sprouts! It could have done with some more leafy greens to give it a different texture.
The sauce is just soy sauce mixed with lime juice, garlic powder, chilli powder and ginger.
I used rice noodles so this is 100% vegan too!
It’s filling, cheap and so quick to make – it’s the perfect vegan dish for a Monday. And if you want more protein then you could always add tofu.
