This may look like a typical tomato based pasta sauce, but it has hidden ingredients! The sauce contains celery, carrots and cauliflower – so this is a great way to get in your veggies and it makes the meal really filling.
I did slightly change this from the recipe, as I had no white wine – I just cooked the veggies in oil.
As I said, it was really filling and I think this tasted a bit better with some cheese sprinkled on top (which of course would make this non-vegan). I also much preferred this hot – I had some leftovers for lunch and had to microwave it!
Sorry this isn’t particularly exciting, but it’s a slightly different way of eating pasta that’s super nutritious 🙂
