I was drawn to this recipe a while back because the ingredients are easy to get hold of (a lot of vegan/interesting vegetarian meals contain weird ones!) and the time taken to make this was only 20 minutes!
Essentially it’s a salad with roasted cauliflower that’s covered in BBQ sauce! The salad itself is great – there are some black beans under there plus a variety of veggies (clearly I need a bigger bowl to show this properly). I wasn’t sure where to crumble the tortilla chips so I just stuck them round the bowl and ate them when I wanted that flavour.
The cauliflower tasted fine, but I think I added too much sauce as it seemed overly sweet! That, combined with the tortilla chips, made this taste less ‘clean’ than most other salads. So, if you fancy something greasy or just a sweet twist on a regular salad, this is a great option for you.
