Fried rice is another great way to use up any veggies that are going out of date. I used this recipe as a base, but obviously left out the bacon in order to make it vegetarian!
The vegetables are just suggestions really – you can pop in anything you like! Also, you can make this spicier with some chilis 🙂 And again it takes less than 15 minutes to make, so great if you work late or just have a busy schedule!
I’ve been seeing loads of posts/photos of cauliflower rice recently, but until I get a food processor I can’t participate in the hype 😦 But I assume this recipe would work exactly the same, just with cauliflower instead!
