Meat Free Monday: Superfood Pasta

Pasta is the ultimate comfort food, but it can be given a healthy twist!

I made this vegan meal while trying to pack in some ‘superfoods‘; garlic and broccoli, plus a few more veggies that were about to go out of date! This is the perfect 10 minute, week day meal. Just cook the pasta (add broccoli and any other veggies after 5 minutes), then fry garlic and add chopped tomatoes in a pan.
