Meat Free Monday: Colourful Stir Fry

I went back to basics today with a simple stir fry; just noodles, broccoli, asparagus, carrot, pepper and mushroom with soy sauce and a blue dragon sachet (Sweet Chilli and Garlic). I also added chia seeds to add a few more nutrients and I think it looks a bit more interesting!

This is a tasty, nutritious meal that takes 10 minutes to make – perfect for Mondays! Literally just boil noodles, and fry everything else in a separate pan, add in the sauce to the veggies and then the noodles – done.

I really like how the Blue Dragon products confirm whether they are suitable for vegans on the packaging (this one was!). Unfortunately I used egg noodles, so this isn’t vegan – I must try non-egg based noodles soon πŸ™‚
