Meat Free Monday: Mediterranean Baked Sweet Potatoes

These were good. These were really good.

And so easy too! I think the only thing that could go wrong is the garlic-herb sauce – I ended up making so much as first the dill was overpowering, then the lemon, then the garlic etc. But it turned out fine in the end!

I also bought some rocket to add as I thought more greens were needed on the plate – the flavours actually worked quite nicely together, but any leafy green would be a great addition.

It doesn’t need too many ingredients, and there’s no expertise needed; the perfect week day meal 🙂

I always forget how much I love sweet potato until I try them again – I need to make it a weekly purchase!
