Since travelling to Morocco last year I’ve wanted to try making my own meals with a Moroccan twist; this potato bake is colourful, healthy and tastes authentic! You can add pretty much any vegetables you have, which makes it a good one for using up veggies that would otherwise go to waste.
I served it with couscous on the side to make it more filling. I like how it doesn’t feel like there’s any meat (or dairy) lacking – it’s a meal as it is. It’s pretty easy and the ingredients are ones you probably have already, so definitely one to try 🙂
