Meat Free Monday: Thai Curry (Coconut and Chickpeas)

This tasted so good – we’ll definitely be making this again as it was pretty easy and cheap! It’s based on this recipe, except we changed Butternut Squash for Sweet Potatoes as I prefer the taste of sweet potatoes.

And yet again, this is also vegan! It’s got so many vegetables in it that it’s healthier and not as heavy as other curries.

I just had this with brown rice and the textures worked really well together, but any grain/seed could work if you’re feeling more adventurous!
