I LOVE pancakes so am really looking forward to Shrove Tuesday – we always make loads of them for dinner. I wanted to try a vegan version this year. It’s mainly based on this, but I used almond milk instead of soy. It’s super simple and if you have a hand held blender it’s even easier!
Toppings wise, you have quite a few options: pictured there’s lemon and sugar, I love maple syrup and berries and a more filling option is banana with dairy-free yoghurt.
