Meat Free Monday 6: Avocado Pasta

This should have been really simple; the recipe says it takes less than half an hour and with less than 10 ingredients, we thought we couldn’t go wrong… There were 2 things:

1. We put double the amount of garlic in (the recipe is for 4 and we halved everything except for the garlic) accidentally of course, but this made it so strong!

2. The blender isn’t very powerful so once that gave up I transferred the contents (messily) to a smaller, more powerful hand blender which worked perfectly.

I think this is such a lovely, colourful, vegan recipe that would appeal to anyone, as long as you remember to put the right amount of garlic in! We’ll definitely be trying this again šŸ˜€
