This is based mainly on this recipe, it was really really good. I think Mexican food works really well when made vegetarian/vegan because beans easily replace any meat. Also if you are vegan, you just need to sub the cheese for a dairy-free version!
It was hot though! If you can handle your heat then by all means follow the recipe, but I think the enchilada mix I used was quite strong (Old El Paso) so I just used that plus a teaspoon of crushed chili (no fresh chili/powder).
I think Spinach/Kale works really well with this as a bit of a palate cleanser – I should have made more but I always forget how much it shrinks when it cooks! This also makes enough for 6 so it means no cooking tomorrow 😀
