Meat Free Monday 3: Creamy lemon and mushroom pasta


This is such a quick, easy and cheap meal that is also really filling. Feel free to add veggies – I love this with Spinach when it’s in season. This recipe is adapted from a few online (serves 2):



1 Spring Onion

1 Garlic clove

75g Mushrooms

1 lemon

50ml Cream

Pasta (ours is tagliatelle)


1. Cook the pasta

2. Heat the oil in a pan and add the spring onion and garlic

3. After a couple of minutes add mushrooms

4. Add the cream and lemon (make sure to taste as you add it)

5. When heated through combine the sauce with the pasta and serve!

As I said; so simple and filling – perfect for a lazy January meal 🙂
