Meat Free Monday 2: Bean Enchiladas


It doesn’t look quite as neat as it should, but this is a really really filling dish (I couldn’t eat both wraps) that’s completely meat free! Again, it’s from the BBC Good Food website and requires only a few ingredients and 40 minutes in total to make.

If I made this again, I would remove the yoghurt/cheese topping and add a side salad to cool down the spicy chilli powder – this would also make the dish suitable for vegans!
